Curious but true: the popular Sylt oyster is actually, yes indeed, an invasive species! On Sylt, this species, actually called the Pacific oyster, is cultivated on farms. In the wild, it poses a problem for the ecosystem. But oysters aren't the only thing you can slurp. Their shells also lend this Gose a touch of the sea. Our cooperation partner and craft beer pioneer Sebastian Sauer from Freigeist Bierkultur combines them with seaweed (yay, superfood!) and salt. You can immediately feel a fresh breeze on your tongue: the grainy, tangy note meets a grassy, mineral touch from the seaweed – more of this, please!
Invasive species, meaning animals and plants introduced into other ecosystems by humans through trade or release, are one of the biggest drivers of global species extinction. But if we view the problem as an opportunity, a creative solution emerges: culinary conservation!
